Immune Strong: Broccoli-Pea SoupEven now, when everyone is a little weakened, the broccoli and peas, among other wonderful vital substances, provide us with a lot of vitamin C. This boosts our immune system! We could use that! And the recipe is so simple and quick! If you don't want to stand in the kitchen for too long, perfect! And for all those who are still healthy: Let's get cracking. This is gonna be good.

Broccoli-Pea Soup
Ingredients
- 1 tablespoon coconut oil
- 1 onion in pieces
- 1 clove of garlic in pieces
- 300 g frozen peas
- 300 g frozen broccoli
- 600 ml vegetable broth
- 1 can (400 g) of coconut milk
- 1 tsp salt
- 4 pinches of pepper
- (Who likes a few leaves of basil)
Instructions
Fry the onion and garlic with coconut oil in a pot.
Add peas, broccoli, vegetable stock, salt and pepper and cook for 8 minutes.
Stir in coconut milk and continue to cook for 5 minutes.
Place 1 ladle of the vegetables in a bowl and set aside.
Puree the rest with a few basil leaves (e.g. 5-6 leaves).
Finally, stir in the vegetables that have been set aside.
Garnish to your heart's content. I'll have basil leaves and pecans for me. The kids like it straight.
