Healthy potato salad

Instead of feta you can also use mozzarella balls. And one more word about the avocado: If you think now - "my children certainly won't eat that" - try it! Cut into small pieces the avocado is hardly visible. You can't taste it either! But it has so much healthy stuff in it! Hardly any other fruit provides so many important nutrients as the avocado.

  • 600 g potatoes peeled and cut into bite-sized pieces
  • 1 onion chopped
  • 1 cucumber cut into small pieces
  • 2 eggs
  • 1 avocado cut into small pieces
  • 200 g Greek yoghurt or vegetable yoghurt. Yoghurt
  • 3 tablespoons of olive oil
  • 1 bunch of chopped chives
  • 150 g feta
  • Salt
  • Pepper
  • and as always: cress at will 😉



Boil the potato pieces in salted water and then rinse with cold water.


Hard boil the eggs and cut them into small pieces.


Put the potatoes, onion, cucumber and eggs in a large bowl and mix. Mix yoghurt and chive rolls with olive oil in a separate bowl and season with salt and pepper.


Pour the yoghurt mixture over the potato salad and stir in. Slowly fold in the avocado and feta.


Who would like to decorate with cress or stir in. Cold setting.
