Potato - carrot - apple casserole


This casserole is one of our absolute favourite dishes! The apple adds its wonderful aroma and the baked cheese - just to put in!

Prep Time: 10 minutes Cooking time: approx. 15 minutes + 40 minutes baking time


  • 600 g potatoes cut into slices
  • 350 g sliced carrots
  • 2 apples (quarter, core and slice with skin)
  • 1/2 tablespoon coconut oil - 150 g young Gauda
  • 150 ml creamy coconut milk from a tin (or 75 g cooking cream / 75 g milk)
  • 1/2 tsp salt
  • Pepper



Preheat oven to 200 degrees top / bottom heat. Boil potatoes and carrots in a pot with a little salt until soft and pour into a sieve.


Grease a baking dish with coconut oil. Layer apple and potato slices alternately in the baking dish.


Drape the carrots in the middle. Mix coconut milk (or cream and milk) with salt and pepper and pour over the vegetables.


Sprinkle the grated cheese over it.


Bake in the oven for 40 minutes.
