Sweet Potato and Carrot Soup

Sandra Ludes - Sweet Potato and Carrot Soup - Gluten-free, histamine-free, lactose-free cooking for the family

Perfect for incompatibilities! It's gluten-free anyway. The coconut milk makes the recipe lactose-free. If you have to watch out for histamine, leave out the onions if necessary.

Sweet Potato and Carrot Soup

  • 600 g sweet potatoes (about 3 large sweet potatoes)
  • 400 g carrots
  • 1.2 litres of vegetable stock
  • 2 tablespoons coconut oil
  • 2 onions
  • 2 tsp curry powder
  • 1 tsp salt
  • 3 pinches of pepper
  • 150 ml creamy coconut milk or 150 g sour cream
  • 50 ml 100% apple juice
  • Wer mag Kresse als Topping



Sauté the carrot and sweet potato pieces with coconut oil in a saucepan for about 2 minutes while stirring.


Add onions and sauté for 1 more minute. Add curry, salt and pepper and fry briefly.


Perceive the wonderfully spicy fragrance, but do not forget to stir 😉


Deglaze with the vegetable stock, add apple juice and simmer for 20 minutes.


Add coconut milk or sour cream and puree.


Season again and add pepper and salt to taste.
