Sweet Potato Nests - I love recipes that are super easy and quick to prepare, but visually hard to make. I also love sweet potatoes! Did you know that they are not related to potatoes at all?

That's why I often and gladly have recipes with sweet potatoes! Whether as my pumpkin-pepper-oven-curry, as baked sweet potato with healthy egg salad, as sweet potato-carrot soup or as sweet potato finger food baked with mozzarella or feta, sweet potatoes are so wonderfully varied and incredibly delicious!

So now my "sweet potato nests" join this list and will hopefully inspire you as much as we did!

Sweet Potato Nests

Prep Time: 10 minutes Cooking time: 30-35 minutes

Ingredients

  • 800 g sweet potatoes peeled
  • 2-3 tsp salt
  • 5 tablespoons coconut oil
  • 1 tablespoon coconut oil for the muffin tray
  • Who likes vegetable or normal cream cheese with chives in addition.
  • Besides:
  • 1 muffin tray
  • 1 spiral cutter

Instructions

Preheat oven to 200 degrees top and bottom heat.

Grease a muffin tray with coconut oil.

Process the sweet potatoes with the spiral slicer into long thin "noodles" and put them into a bowl.

Mix the sweet potato noodles with 5 tbsp. melted coconut fat so that the vegetable strips are well moistened with the oil.

Now mix in 2-3 teaspoons of salt.

Spread vegetable strips in 10 muffin troughs of the muffin tray.

Bake in the oven for 30-35 minutes. (Observe the last 5 minutes so that they don't get too brown.)

Who likes makes little cream cheese balls. Simply take a teaspoon of cream cheese and form a ball in your hand. Now roll in pieces of chives and add each to a sweet potato nest.

Notes

The sweet potato nests become somewhat crispy on the outside and remain softer on the inside.
